Monthly Updates #6: March Food

The third Saturday of March is upon us, and that means it’s time to talk about what I’ve been stuffing in my face this past month!
Here’s a tip: still no meat – I’m actually starting to look forward to this whole Dagen Zonder Vlees (Days Without Meat) being over… (Can somebody give me a nice and greasy burger already?)

1. Salads


Belgium is finally starting to realise it’s no use being cold in March unless there’s some actual snow to go along with it (which has actually happened), so I’ve returned to my old love: salads.
I love how much variation you can have with just one basis, so usually, I tend to to make a load of that basis at the beginning of the week, and then just add something new every day to keep it “exciting”.

This past week, I just simply cooked some farfalle pasta, and mixed it with some delicious, cubed Gouda cheese, cherry tomatoes, baby carrots. I prepared some iceberg lettuce to eat with it, and I also made some fresh hummus (which is, actually, ridiculously easy to make: put some chick peas, some olive oil, some garlic and, in my case this week, some bell peppers together and blend it all together – and done!)

On Monday, I just ate the two as is, on Tuesday I added more bell peppers and some cucumber, on Wednesday I added some diced green apples and spring onion, and on Thursday I just decided to add some more tomato and heat it up, resulting in a delicious cheesy pasta – you gotta be creative, you know?

But anyways, yes, salads – I love those!

2. Oat meal

Yes, such a cliche, but, you know, it’s a cliche for a reason – namely: it’s good for you, it’s easy to make, and it will last you through the day.

Most days I just grab whatever I can find for breakfast – today, though, I managed to actually get out of bed on time, and this is the result 🙂 #foodstagram #breakfast #porridge #foodie

This one really is one of my all-time favourites, especially during exams when I try to watch what I eat more (because heaven forbid I’d mess up one of my exams because I couldn’t focus while studying!)

3. Starbucks Cool Lime Refresher


As I said, spring is finally starting to come back, and that means that I can start saving up for the Starbucks Refreshers again! I actually found a copycat recipe – which works! – on Just a Pinch of Ginger, so I’ve been making this a ton – also, fun discovery: apparently I really like the taste of minty-cucumbery-water! (Read the recipe, and you’ll figure out what that is all about 🙂 )

 

4. Ben & Jerry’s Dough-ble Impact Core

Now, this is basically the best thing since warm water, okay? My two favourite Ben & Jerry’s have always been Cookie Dough and Chocolate Fudge, and this one basically has both of them in one!
Is this incredibly unhealthy? I don’t doubt it – but I dare you try a taste and not love and need it as well!

5. Homemade Iced Tea


I actually have a whole post on how I make my Homemade Iced Tea but suffice it to say: I’ve been making a ton of this as well (actually, two drinks on here this month, it really must be getting warmer!)

And of course what could be better than to combine two of my favourites of this month?

Let me tell you: you need a delicious, can-be-made-in-5-minutes-or-less breakfast? Have some porridge and iced tea! (I know I did, this morning!)
